Unlike gas boilers and other heating technologies, air source heat pumps do not generate thermal energy by burning fuel. Instead, they run on electricity and use a refrigeration process to extract heat from the outside air. Ambient heat is absorbed by a refrigerant liquid, compressed at high pressure to raise the temperature, then passed through a heat exchanger to release its heat to your hot water tank.
Modern commercial air source heat pumps can extract heat down to an outside temperature of -25°C. As long as the ambient air temperature remains above this threshold, the system will continue to work. Heat pump hot water output temperatures vary depending on how the appliance is configured, but 50°C to 60°C is normal for most commercial systems.
